Y'all might expect them good ol' boys to stick to tradition like molasses on a summer day, but sweet mercy, they done taken their smokers down a different dirt road altogether, servin' up fancy-pants beef cheeks and whole hog that'd make your mama swoon right off her front porch rocker. Them folks done earned themselves one of them fancy-schmancy Michelin stars, which is about as rare 'round these parts as a vegetarian at a pig pickin', but don't you go thinkin' they got above their raisin' - they still treat every customer like kin come home for Sunday supper. Why, they got themselves a sauce made with beets of all things, which sounds about as crazy as a sprinkler in a rainstorm, but Lord have mercy if it ain't the finest thing to grace a piece of meat since salt discovered pepper.
